PIZZA PIE - Whole Wheat dough (recipe idea is from A Taste of Heaven and Earth)
Here's my favorite whole wheat pizza dough recipe. I normally triple the serving and freeze two portions, the dough is good for up to 4 months. Just take out of the freezer, bring it to room temp, punch it a little then it's ready to use.
single serv triple serv
1/3 C water 1 C
1/3 C milk 1 C
1/2 t sugar 1 1/2 t
2 T active dry yeast 6 T
2 T olive oil 6 T
1/4 t salt 3 pinches
1/2 C WW flour 1 1/2 C
1 C flour 3 C flour
Heat water, milk and sugar to 110 degrees (warm to touch but not hot). Pour into large mixing bowl and stir in yeast till dissolved. Mix in olive oil and salt. Sift the flours together and gradually stir the mix into the bowl until the dough is soft enough to knead. Put the dough ball onto a slightly floured surface, sprinkle flour on the top and knead the dough for 5 minutes adding more flour if necessary.
Put kneaded dough into a lightly oiled bowl, cover with a cloth and let rise for 30 minutes or until it's doubled in size. Punch it down and if you've used the triple serving, cut into three equal parts. Put the two extras into a slightly floured plastic bag, squeeze out the air and stick it in the freezer. Your next pizza will be a snap to make!
Preheat oven to 500 degrees.
Oil the pizza pan with olive oil, or if using a stone I spread cornmeal on the stone. On a floured surface roll out the dough, some people like to make their pies into a heart shape, which looks more like boobs to me. Pinch up the boobs, I mean the edges to make the crust and add your favorite toppings, be creative! I brush the crust with oil and sprinkle on sesame seeds to make it into my signature pizza pie. Bake till done (10-15 minutes).
Add a bottle of dry red wine or a six pack of beer and you'll be ending your night with some wonderful desert ;)
